The Aspen Grille is greener this year

The Aspen Grille, located in the Lory Student Center, has always been as local and sustainable as possible with local products from nearby farmers and ranchers. This year the Grille just got "greener."
The Grille still features the same Colorado products with some new additions like Colorado bass for fish tacos.
The newest "green" feature is "Carbon Neutral" lettuce. The students are growing many unusual varieties of lettuce in the greenhouse located on Lake Street. The unique greens are biked to the Grille for service the day of harvest. This way the greens are grown and transported without the use of fossil fuels.

In addition, the Aspen Grille was certified this summer as a "Green Restaurant." They are proud to be one of only two restaurants in Colorado and one of only two colleges or universities in the nation to be so designated.
To achieve this recognition the Grille accomplished four initial steps to becoming a green restaurant. These steps included:
- installing low flow sink faucet aerators
- switching to environmentally friendly detergents and cleaners
- maintaining energy efficient cooking equipment
- the use of 100 percent post-consumer recycled and chlorine-free paper, as well being Forest Stewardship Council certified
The Grille has also undergone a remodel. Please join the students of the Restaurant amd Resort Management Program in the Department of Food Science and Human Nutrition, College of Applied Human Sciences, at the Aspen Grille Tuesday through Fridays.
